OUR STORY

At Lox in a Box, our story is one of tradition, culture, family and community.

Our story originates from deep within the Jewish communities of Poland. In 1904 our family travelled west to London, with hand written recipes in their back pockets. The humble Polish bagel found it’s way into the heart of our family run provisions and merchant deli. It was here that our recipes were perfected, high quality goods were traded, and tradition was established.

Following in our family’s footsteps we emigrated from London to California. The next generation refined our recipes and shared our tradition with appetizing catering, run lovingly from our home kitchen. With strong family connections in Sydney we grew from one home kitchen to another.

Our current chapter is a love letter for our Grandmothers, as we continue their legacy. We give thanks to our rich heritage for shaping who we are today. From our signature deli provisions and house cured lox, everything we create remains authentically ours.

What is lox?

It’s in our name for a reason. a cornerstone of jewish deli culture. preserved and celebrated over generations.

Lox is salt-cured salmon.

Our lox is made in house from New Zealand Ōra King salmon. Sustainably raised in tune with nature it is unlike any other salmon - so exceptional it is often referred to as the wagyu of the sea. Prized and renowned for its harmonious balance of sweet umami and rich, buttery texture.

Our lox is a labour of love. Cured in-house and crusted with our signature peppery pastrami rub. We take such pride in our fish, with every piece being hand sliced by our team.  

Traditionally served atop a bagel, it is best layered with schmear, tomato, capers, red onion and a generous squeeze of lemon - just as we do on our classic lox bagel in store.
